Brunswick Stew

On a recent trip through Ohio I scored a squirrel that was cleaned and dressed and vacuumed sealed in a freezer by my friend Brandon.


We just had a couple of days of "Wintry Mix." Snow and freezing rain and slush. Down here the world closes when a cloud passes over the sun. I threw the squirrel in the Instant Pot and made a Brunswick Stew. Carrie and I walked through the snowy woods and delivered Brunswick Stew to the neighbors.


It reminded me of this poem, that was published in Ailimentum in 2013:



Brunswick Stew


There’s no recipe

Just principles


It must have wild game

When out of squirrel

Use venison

Or left over rabbit


Simmer all day

Add any orphan

From the fridge


Last summer’s tomatoes

Last summer’s corn

From the freezer


Season to taste
